三平汁は、塩サケや塩タラと野菜を煮込んだ北海道の郷土料理です。ニシンが豊富に獲れた時代には、塩漬けやぬか漬けのニシンで作りました。江差では今もイベントなどで郷土の味として提供し、人気を博しています。
