Maizuru is home to two unique reference books on naval cooking. The original edition of the “Navy Cooking Reference Book” by the Maizuru Kaiheidan has been preserved and reissued by Maizuru citizens, while the “Textbook of Navy Cooking” in the city is the only such text on display in Japan. Dishes developed from recipes in the reference work, such as the famous Navy curry, have become Maizuru specialties. The books feature Western dishes adapted by the Navy to Japanese tastes, innovations that had a tremendous influence on the development of Japan’s food culture. These dishes are still enjoyed regularly across Japan.
