厳しい自然環境にある信州の山間部においては、古くから自然と共存した暮らしの中で生まれ引き継がれてきた、熊、鹿、猪など「山肉」の食文化がある。飯田市南信濃及び上村に位置する遠山郷では古くから、狩猟による山肉（熊肉・猪肉・鹿肉）加工が産業とされている。江戸時代後半、秋田の旅マタギが入り、今もマタギの狩猟技術や文化が受け継がれている栄村秋山郷は、雪中での熊猟が有名である。
